AUNTIE HELEN’S RED PEPPER DIP

Easy to make and delicious on everything from crackers to smearing under a platter of roasted vegetables to drizzling over couscous topped with a simple chicken to smearing on sandwiches…really the possibilities are endless.

INGREDIENTS:

  • ¾ cup walnuts, slightly toasted till they just begin to smell nutty, be sure not to burn

  • ¾ cup raisins

  • ½ cup plain, Greek yogurt (both whole and low fat work here)

  • ¼ teaspoon salt

  • ¼ teaspoon pepper

  • 1 - 12oz bottle of roasted red peppers, drained

DIRECTIONS:

  1. Place all ingredients in blender and blend till smooth.

  2. Chill in refrigerator before serving.
